Tried sourdough for 5 years and hated it. Then I visited a bakery in Portland.

Stopped at Tiny Bread House last month and tried their morning bun. Changed my whole mind about sourdough being too tangy or tough. Anyone else had a bakery turn them around on a style they swore off?

Walked right into that bakery expecting more of the same hockey puck sourdough. Their starter has been around since the 80s or something, it had a mellow tang I actually liked. That morning bun was soft with a nice chewy crust, not a jaw workout like most. Now I’m the guy texting friends about yeast like it’s a new hobby.

Oh wow, I just read that older starters actually develop more complex flavors over time, isn't that cool?

Yeah I read aging the starter longer mellows that sharp tang a lot.
