The timer I ignored at 3am made my cinnamon rolls a brick wall

Was baking for a weekend farmers market stall in Portland, 48 rolls scheduled. Set my phone timer for 12 minutes and figured I could stretch it a bit because the oven runs cool. Fell asleep on the couch waiting. Woke up to the smoke alarm at 3:15am. Those rolls were so hard I could have used one to replace a broken tile in my kitchen. Scrapped the whole batch, lost about $35 in butter and flour, and had to run to the store at 6am for emergency supplies. Now I set two separate alarms, one across the room. Anyone else ever do the whole "I'll just push it a couple minutes" thing and regret it for days?

My sister-in-law did the same thing and forgot the baking soda, so our bake sale ended up with flat discs that could pass for hockey pucks. But honestly, the charcoal thing is kind of a sign you didn't let the oven preheat long enough, mine always smoke like crazy right at the start. Nobody ever talks about the smoke detector going off at 6am, that's the real wake-up call lol. At least you got muffins and not a full kitchen reno project. I'm just glad we don't have to worry about the school board doing a surprise health inspection on those things.
