That tip about letting dough rest longer was a total game changer for me

My aunt Alice, who bakes bread for the farmers market in Burlington, kept telling me to let my dough rest for at least 45 minutes after mixing. I always thought she was crazy because I'd rush to knead it right away. Yesterday I finally tried her way with a batch of sourdough and the texture came out way better than anything I've made in 3 months. Anyone else have a relative who gives you advice that actually works?
