Showerthought: I switched to weighing flour after a $40 scale saved my butt at the Iowa State Fair
Watching a judge at the Des Moines contest pull apart my entry and say my crumb was gummy because I scooped instead of weighed sent me straight to the vendor hall, and I have not touched a measuring cup since, so does anyone else here swear by grams or are you still team cups?
Learned that lesson the hard way too, except mine was a batch of chocolate chip cookies that spread into one giant pancake. My wife kept telling me to just scoop and level like her grandma did, but grandma was baking at sea level in a kitchen that never changed. We moved to Colorado and suddenly nothing worked, and it took me way too long to figure out the flour was the whole problem. Once I started weighing, I found out I was packing almost 30 percent more flour into every cup than the recipe wanted, which explains a lot of dry hockey pucks from my early baking days. Now the scale lives on the counter and I use it for coffee too, because if I am going to be a nerd about one thing I might as well go all in.
