PSA: That 'artisan' flour blend from the new shop cost me $45 and ruined two batches of bagels.

It was way too high in protein and made them tough as rubber. Has anyone found a reliable brand for New York style bagels?

Wow, it's a huge deal when you waste that much time and money on bad flour!

Is it really that big of a deal? They're just bagels. So the flour was bad, toss it and move on. New York style is just a style, not a life or death thing. Grab some regular bread flour from the store and try again.
