My old boss in Milwaukee told me to stop proofing dough in the walk-in, and I still think he was wrong
He said the cold air would kill the rise, but after 15 minutes of arguing in that 38 degree cooler I showed him the dough had actually puffed up fine, so if you've tested cold proofing yourself, what temp and timing actually worked for you?
