My grandma's pie crust recipe has no measurements at all

I was talking to my cousin at Thanksgiving about how she got grandma's pastry to turn out so flaky and she said 'you just have to feel the dough, I don't know how to explain it' and it made me wonder if we've lost something by relying on grams and timers instead of just touching and watching the dough.

Did you ever see that episode of Great British Bake Off where the guy just kept dipping his finger in the dough instead of using a thermometer? I swear my aunt does the same thing with bread, she pokes it and goes "yep, that's ready" and I'm standing there with a probe like an idiot. It's wild how some people just have that touch. Makes me think we probably overthink a lot of this stuff. My buddy tried to teach me to make tortillas by feel and I just ended up with sticky hands and a mess.
