My grandma told me to always weigh my flour, not scoop it, back in 2008.

I thought she was just being fussy, but after three flat cakes in a row, I bought a cheap scale and my consistency shot up. How many of you still use the scoop method, or did you switch to weighing too?

Your grandma was onto something important. Scooping packs the flour down and you end with way more than the recipe calls for. A scale is the only way to get a true cup, because flour settles so much in the bag. It turned my baking from a guessing game into a sure thing.
