Battling humidity to save my cookie shapes
My cookies kept spreading into flat pancakes every summer. I thought it was the butter temperature, but after some tests (it was a bit of a puzzle) I found humidity was the culprit. Now I add a little extra flour on damp days, and they hold their form. Anyone have other tips for baking in high humidity?

Glad you figured out the humidity issue. I always chill my dough longer on sticky days, sometimes even overnight. Using bread flour instead of all purpose can help because it has more protein. Another thing is to bake one sheet at a time so the oven heat stays even. I also keep my butter cooler than usual when I mix it.

My friend had a similar issue last summer. Her cookies kept spreading too much. She chilled the dough overnight like you said. Even used bread flour for more protein. But she didn't keep the butter cool enough. The cookies baked flat and greasy.
