My uncle Ray was over at my place in Boise last Sunday and he tried to show me his trick of nuking a whole head of garlic in a mug of water so the skins slide right off. He ran it for 2 minutes and the kitchen smelled like a cheap Italian restaurant for the rest of the day. I asked him why not just smash it with the flat of a knife, and he looked at me like I insulted his dog. Has anyone actually made this work without the garlic coming out half cooked and weird?
Man, my buddy Dave tried this exact thing after seeing it on some cooking video and his garlic came out soft and pale like little wet peanuts. He said the skins did slip off pretty easy but then he tried to saute it and it just turned to mush in the pan, no browning at all. His wife still brings it up every time he cooks, calls it his garlic soup incident. Sticking with the knife smash seems way less risky to me.
