My roommate dumped a whole box of baking soda in the chili to "kill the acid" and now I eat dinner in my car
This happened in our kitchen in Boise two weeks ago. I told him chili doesn't have acid to kill, it has chili powder, and he just shrugged and stirred. Has anyone actually saved a batch after someone does this, or do I throw the pot out too?
Your roommate might not be as dumb as you think. Baking soda neutralizes acid, and tomatoes are acidic, so if your chili has any tomato in it, he was actually doing real chemistry in that pot. The problem is he used way too much, like a whole box, when a pinch would've done the job. A half teaspoon can soften the bite of a too-tangy batch without turning it into salty foam. Dump the pot, sure, but don't act like the idea itself was crazy, just the amount.
