Man, those old timers are something else. We had a similar mess on our floor and I watched a guy map out every single wire with masking tape before he touched anything. Best tip I can give is label both ends before you cut, because I skipped that once and spent a whole morning buzzing out lines with a meter. Also leave some slack in the runs so the next person isn't stuck redoing your work. That guy from Wichita saved your shop weeks of headaches down the road.
