Two summers ago I was shopping at the Piggly Wiggly on Highway 49 in Gulfport when a transformer blew around 2pm and the lights died mid-aisle. By 4pm the store staff were rolling overflowing carts of melted ice cream and thawed chicken out to the curb because their backup generator only ran the registers and a few lights, not the freezers. I stood there doing the math on my own setup at home and realized my chest freezer would be a swamp in about 48 hours if we ever lost grid power for real. That week I bought a 2000 watt inverter generator, a pair of 5 gallon gas cans, and a wireless thermometer so I can watch temps from inside the house. I also started keeping four cases of shelf stable milk and a big bag of instant rice in the closet, stuff that does not care if the power comes back. The part that still bugs me is how fast it went bad. Six hours, that was it, and half the store was garbage.
