TIL the diner near my mom's place in Erie cooks its famous wings in an air fryer, not a deep fryer
I was at a little diner in Erie last weekend and asked the cook why the wings were so crispy without being greasy. He laughed and pointed at a big air fryer sitting right on the counter behind him, said it runs almost all day. He does 400 degrees for 22 minutes, shakes the basket once at the halfway mark, then tosses them in sauce. I always thought restaurant wings had to come out of a vat of oil, so this threw me. Anyone else catch a kitchen using an air fryer for something you figured was fried the old way?
