TIL sweet potato fries beat regular ones in the air fryer

I was always team regular potato until my roommate made sweet potato fries with a little cornstarch and they came out way crispier in 12 minutes. Has anyone else switched sides on this?

My roommate convinced me to try sweet potato fries with a tiny bit of cornstarch and paprika last week and I was shocked at how good they were. I used to think sweet potatoes were too soft and mushy but the cornstarch trick changed everything for me. The air fryer got them perfectly crispy on the outside and soft on the inside in about 12 minutes. I still love regular potato fries but sweet potato ones are now my go to when I want something a little different. I honestly thought I'd never switch sides but here I am.

Totally get what you mean about being surprised. I had the same Exact experience when my friend made them with a little garlic powder and they came out so good I felt stupid for avoiding them for years. The air fryer really is a game changer for getting that perfect crunch without all the oil.
