Changed my chicken game after a buddy called it 'sad wings'

Had a friend over last month and he straight up said my air fryer wings were sad and flabby. I was doing 380 for 20 minutes and they came out okay but not crispy. He told me to dry the wings with paper towels first and then hit them with baking powder before seasoning. Now I do 380 for 15 minutes and then crank it to 400 for 3 more minutes and they come out actually crunchy. Has anyone else had to totally switch up their wing method after getting roasted by a friend?

And @ryanburns is totally right about the difference, yeah baking soda can mess things up fast. So if you're using baking powder, do you find you need to add anything extra to get that really crispy texture? I've heard some people mix in a little cornstarch but I'm not sure if that's overkill or the real trick.

Actually baking powder and baking soda are different things, you want baking powder for wings since baking soda can leave a weird metallic taste if you use too much. I learned that the hard way after ruining a whole batch.
